Is there a way to subscribe/watch a group of forums. I use if often for specific topic threads but wondered if it's possible to set a subscription/watch for a forum group.

yes, thats what RSS is for…  you cannot use the topic subscription for groups or forums…  you can auto subscribe to topics you post in…

no problem.  doing subscriptions on forums or groups could get real cpu intensive too…

How about Admin. e-mail notifications of all posts (ie: Admin subscription to entire Group/Forum) … I can't find this option if it exists.

admins can get notifications on all posts…  as can admins… you have to enable the option in your admin/mod options on forum – admins – your admin options
