So, our active theme is the Default theme (Silver)
When viewed on…
— Desktop: Looks as expected
— iPhone: Looks good (like a responsive design should)
— iPad: Looks good EXCEPT it displays in the ‘Berries-n-Cream’ overlay

What do you have set for the theme to use for mobile tablets? And of that is correctly set – do you have the user selection plugin active and could this have been selected using that?
but I am surprised to hear you say thngs look OK on a phone using Default as it is not a responsive theme…
That was it: the tablet theme had the wrong colors. (I forgot there are separate selections for mobile and tablet)
Correction: I see I have the ‘Unified’ theme selected for mobile.
Currently, I have ‘Default’ theme selected for tablet…. Should I be using the ‘Unified’ theme?

Entirely optional. Unified works just fine on a tablet although it will display in ‘desktop’ mode not ‘phone’ mode due to the greater available real estate. A quick change will tell you if you like it…
