Hi:
Did you have the WordPress debug log flags turned on? If so, what's in the debug.log file?
If they were not turned on, can you please restore the database, turn on the WordPress debug log flags and try the upgrade again. Then check the debug.log file to see what errors might have been thrown in there.
Also, can you confirm your WordPress version and PHP version?
Finally, you might just want to try to do the upgrade with plugins and themes disabled. Its a long-shot but maybe something is intercepting the DB calls we're making and modifying them before they get to the database.

Thanks for the reply. I did not have the debug log flags turned on. I'll turn them on and attempt another update, hopefully Sunday if I can make the time.
WordPress is v5.1
PHP v5.6 - I think I also tried with v7.2
I'll post back and let you know what I find.
