We have multiple membership levels using the MemberMouse plugin. Can we restrict forum access to specific membership levels?

As long as the membership plugin conforms to the WP API, you can map WP roles to SP usergroups, and SP usergroups are bound by forum permissions which you have full control over - per forum - to restrict or allow access.
So basically yes, no problem.

As far as I know, MemberMouse conforms to the WP API. However, it doesn't use a direct mapping from WP roles. I believe all of our members use the "Subscriber" role, but within that role there are various membership levels. I want to restrict access based on these membership levels alone, not on the WP roles.

I must admit that MemberMouse is a new one on me!
The problem is that your MemberMouse is unaware of Simple:Press and Simple:Press is unaware of MemberMouse. What ties them together is that they are both part of and aware of WordPress. So any automatic SP User Group assignments have to be achieved through WordPress- hence Ike's question about supporting the WP API.
The only method of really doing this is via WP rioles. Let the membership plugin assign and change WP roles and then let the WP role change update the SP User Group. There is an FAQ in our codex in the 'How To' section which will explain in more depth.
