I’ve been looking at buying a bundle but don’t know what is in them besides the premium pack

The main and only bundle right now is the Platinum Bundle. It includes all the add-ons and premium support.
There are also Simple:Press Member Manager and Simple:Press Member Subscriptions. Those are not included in the Platinum Bundle and they are larger plugins that handle more general community focused functionality.
