Using the website, webpagetest.org (chicago, firefox) we discovered a 2.5 second pause when loading our main forum page (www.giantscalenews.com/sp-forum).
Is this normal for Simple-Press or is there something that can be done to reduce this delay in loading the page?
We're using a VPS service through wiredtree.com

Normal? no, not really... but responsiveness will generally be based on server ability... the more things you do on your site (wp, plugins, etc) will affect it... simple press is a plugin so will require more than plain vanilla wp, for example...
tried a few page loads myself and saw 1 - 2 seconds load for forum page... but essentially the same loading time for any other non forum page on your site too...
however, I can add, from an sp perspective, the more forums you display on group view (or the more topics on forum view or more posts on topic view, etc), the more resources required... the database queries to fetch all the time just takes longer than grabbing 1 forum for example... you have 60 forums - a rather large number... for an absolute perspective, 30 forums (for example) would take less resource and load faster... would you notice? depends on the server... but since all you site pages take essentially the same time for me, you probably wouldnt notice...
one test you could do... load a forum view (list of topics in a forum) or topic view (list of posts in a topic) and see if you see same response time as main forum page (on couple loads, I didnt)...
if you did want to reduce the number of forums, you could use a forum / subforum relationship...
