Can you point me to an example of a post posted by a user who has actually entered their country and gender so I can make sure I am looking at the user details of a post where there should be something to see?

should be able to do it with our user... go to the profile and add one and do test post...

Clearly something is wrong there. It appears that there is a filtering issue with the data which could be related to changes that WordPress made to core filters in 4.0 and 4.1 that we missed, I will open a tocket to get it looked into.
However - we can still get you working using the alternate function which actually is better anyway as it allows more flexible styling.
Take a look at the spTopicView.php template that you changed and you will see that I have swapped the function for the extended version which is working. Details of the extended function are also available on the plugin codex page if you need further information on it.
Sorry this took so long but I think we got there in the end and we will get the base function fixed up.
