Sorry, maybe we didn't explain that part at the end there. As Steve said, whitelist the themes stylesheet so in this case default.php
sp-resources / forum-themes / default / default.php
This is because our themes stylesheets, although containing CSS also contain PHP so must use the PHP extension.
OK, one final update. The problem was with Sucuri, and the "hardening" settings. We later noticed another PHP-based feature on the site wasn't working as well. I am afraid my IT guy made the appropriate fixes, but it wasn't a whitelisting solution, it was something else. I am not exactly sure what he did... above my pay grade.
Either way, I wanted to update this in case someone has the same problem in the future.
