I'm dead in the water, I can't do any admin work on my website. This is the full error:

Fatal error: Call to undefined function wp_doing_ajax() in /home/tflcarco/public_html/tfltruck/wp-content/plugins/simple-press/sp-startup/sp-load-core-admin.php on line 29

Please help!

sounds like you upgraded Simple Press but are still running an old version of WP...  The Simple Press version 5.7.3 requires WP version 4.7 (as was listed in the WP upgrader before you updated)...

So you will need to update to WP 4.7...
