If you have Google Analytics setup to be added to every wordpress page it will track the forum pages also. You can add the analytics code into your site manually or use something like the Google Analyticator plugin which makes it a little easier and has a few options you can adjust.

What I also mean is, I tried using slimstat to track the forum but obviously as the forum is using shortcode from one specific page it wont track sub forums / topics etc. Will Google analytics track it this way or only hits to the forum main page where the shortcode is used?

no, google analytics is in the footer of the page and should record the actual url vs the wp page...  so yeah, should work...

Many thanks Mr Papa, appreciate the response.

If I was using raw HTML as opposed to a plugin (the main website that the store is on is using the UA code) would I insert it into the page that the forum is shortcoded into or into the footer.php of the theme?

not in the page source...  should be in the site footer, so the wp theme footer.php would be good...
