I'm pretty sure I saw a screen where I can change the way the H1 tag is generated on the forum pages but now I can't find it. Can someone please tell me where to set that up?

Right now, the pages have an H1 tag that looks like this: Topic | Group | Forum. I want to completely change the format.

Are you looking for SEO options? as in forum > components > SEO?

After looking around for over an hour I finally remembered that think I saw what I was looking for in the All-In-One-SEO plugin (which I deleted in favor of using Yoast SEO).

How I fixed my problem was set SP to remove all page titles completely in the Display settings, then set a title for the forum page in my theme. That wasn't quite what I wanted but it works fine.
