I must have spent the last hour doing nothing but going to codex and reading plugin descriptions, but just cannot figure out how to admin. Feel like the village idiot!

I see the "edit" button, how do I do ANYTHING else?
Also, how do I remove those forum stats as they clearly only confuse me.

All of the above (excluding removing stats) can be done through the popup toolset.
As an admin viewing a topic, hover over a post and you should see a little box pop up with a spanner / screwdriver just above the users avatar. Clicking that will give you an array of options all specific to the post which it appeared on. You also get this toolset on individual topics when viewing a forum.
Removing the stats is pretty straight forward. You will need to create a child theme of whichever theme you're using (default I think), include the spFoot.php template, and comment out the stats functions you don't want to see, or the entire section.
