How do I remove the whole bottom section with forum stats, member stats, newest member, moderator info, etc? I don't want that to be viewable on the forum or in the wp dashboard.

In the WP dashboard you can turn off display by going to the Forum Admin section > Global Admin options and turn it off.
In the forum it would require you edit the Simple:Press theme. Specifically the footer file named spFoot.php in the theme's /templates folder.
Before editing it though you should have a custom theme so the changes don't get lost. The main reason for this recommendation is because after you edit an existing theme any new update will overwrite all your customizations. You don’t want to lose all your hard work!
