Hi, congrats on moving to a support site and well done!
Under Forum -> Settings I only see
global settings
general display settings
content settings
member settings
email settings
I am missing a few like 'Post Settings','Topic Settings' etc - where do I define those settings now?
I'm on SP 5.0.5 and WP 3.3.1

V5 of Simple:Press has been rewritten to use themes and templates. Virtually all display elements are now controlled by templates and template functions in the same way the WP themes are. This allows for unlimited customisation of the layout and look and feel of your forum page and extends options which were previously limited to admin panel settings. It also allows for improved performance and a smaller codebase.
We are, of course, happy to advise on anything you need to change - especially as the codex documentation for the api is still under construction.

The current column where it puts the users avatar, name, how many postings etc with every post is very narrow, which means it's about 2 or 3 inches long - leaving big gaps on the forum page. (Screen shot attached). How do I change that to either display ABOVE the posting or in a way that doens't leave all the white space?

Not only that but I think your Wp theme is also forcing some margins that are causing the post to slip below the side panel.
You can go for having what is now on the left above the post by switching to the 'stacked' theme - there is a download link for themes on our main download page.
Or you could edit the spTopicView template in the current theme - which you can do with our theme editor. If you open it you will clearly see a code block that behind Column 1 and another as Column 2. In those calls to define each of the columns is a percentage width... you can juggle those until you get it to look right.
