Well let's start by seeing if we can actually make it right for you before talking about other options.
Go to the wp admin menu - Settings - General.
is the timezone in that panel correctly set the way you want it? And what is it set to? Can you ensure oit is set to a specific city?
Next go to your forum profile and on the profile options do the same thing, Set the timezone for your personal location. Again use a city.
Does that fix it?

I checked the Timezone under WP General Settings and it's set to Chicago - which is correct.
I checked my profile under WP Users and there is no timezone associated with me.
I checked my profile under your Edit User Profile Forum - Options - Edit Display Options and the Timezone was set to UTC so I set it to Chicago but after updating the Display Options it is reset back to UTC.
So I remember changing the timezone to Chicago when I first brought up your forum but I guess it reverted to "UTC".
And UTC is - what - 5 hours difference I believe. Which explains the values you are seeing I think. Posted in Chicago but displaying the time of London.
So you say it wont save? Not something I beieve others are seeing. Can you see if you can set it here in your profile?

Just to let you know that I'm experiencing exactly the same issue (have checked the previous thread, and am not running that plugin either).
The 'last post' time seems to display a relative time of '1 hour ago' (as opposed to 'x minutes ago') for all posts made less than 1 hour previously.
Have also checked my WP timezone settings - I'm in London, and the WP time is set correctly. No matter what I do to the timezone in user profiles (e.g. attempting to set it to a particular city), it always saves with 'UTC'.
I had a quick look through the error logs - am not sure if this would be relevant, but am including it in case it helps track down where the error is occurring:

as mentioned elsewhere, there is a ticket open to investigate this... suspect we recently broke something when fixing a bunch of notices and w3c validation stuff...

Just applied the latest upgrades for your plugins and tried to change the timezone. When I click Edit Member Profile I see:

I think you do not have the corresponding core update... please check for core update...
and btw, we have not done anything to resolve the timezone issue that has cropped up yet...
