When my members or myself click the remember me button for login, it doesn't remember the user the next time they log in.

This is not actually anything to do with Simple:Press but is pure WordPress which is responsible for all login procedures.
But one thing you can check is that you have cookies turned on as this feature does require a cookie to be written out.
