How can I remove the © Simple:Press from the bottom of each post/page?

Hey,
If you are using say 'Default' theme for an example (works the same for all themes)
Browse your folders for sp-resources > forum-themes > default > templates > spFoot.php
If you go down to about line 70 you should see '#start the 'about' section'
Everything in this from the section start to the section end, or just the sp_Acknowledgements function can be removed to get rid of the information at the bottom of the page.
