Emilio has kindly supplied me with a copy of Pro with which to test. I have ste this up and using the Safari user agent of iPhone been running through my development site with SPV5 installed.
So far so good and everything is displaying as it should. Both posts and pages are all just fine.
So - two things are posible. One - the conflict lies elsewhere and a third component is responsible. Or - maybe you have some settings on wptouch pro that are the cause. For the latter, of course, I will need to know how your options are set.

So a clean install works flawless...
I have tested it without any (other than Simple-Press) concurrent plugins and with the TwentyEleven theme, and the problem persisted.
So it must be one of my settings in WPTouch-Pro, or maybe my setup data is corrupt.
I think the quickest way to go is that I’m going to re-install and reset the plugin...
