sorry, what do you mean by get an error?? when you schedule a post in the future, does it show up? if not always/reliably might indicate issue with wp cron... you can check the wordpress.org forums for fair number of issues for folks on that and potential work arounds...

I have noticed that the Cron schedule is only updating if I disable and then enable the SimplePress plugin and then run the sph_stats_cron.

I really am going to have to refer you to the WordPress forums as Steve did above. The Cron and Cron Schedule is a WP core system and as Steve pointed out, there are a fair number of issues on the forums along with possible work arounds. I do not think there is any way we can improve on that....
