I have one client who's subscriptions have stopped sending her emails. She is one of our moderators so she has an extensive list of subscriptions. She has been getting emails until about a week ago.
SP and SP Plugins are all up to date and I know of other users that are getting emails, so I am not sure why this one particular account has stopped getting them.
Is there anything I can do to sort of "reset" it?
If emails are still being sent out then that really is the defining factor. And - nothing has changed code wise. Sadly, WordPress doesn't keep a log of the emails it sends out so it is not possible to check but my bet is they are being sent as usual. It is, to be frank, more likely to be an issue on the users end. Maybe for some reason they have slipped into being marked as spam or are being rejected. I would also ask the user to double check all the settings in their SP account - email address etc. But clearly the bottom line is that WP seems to be sending out emails...

also, is this subscription digests or individual notices? the former runs on a wp cron job, so may need to verify they are still operational...

It is worth noting that if the CRON task that sends out the digest emails is not functioning then nobody signed up for the digests will receive them. I had the initial impression that this is not the case. But having said that...
WordPress has always had a, shall we say, slightly difficult time with CRON tasks. For some reasons they do sometimes - although rarely - turn themselves off.
Simple:Press actually gives you a admin page in the forum toolbox section that allows you to monitor and see all of the CRON tasks that are set up. This includes when the next task is scheduled to be actioned. If you keep a watch in those then they should peel off when done and then get added back into their position for next time.
If the more general WP tasks are working but SP tasks are not then the easiest way to get them re-scheduled is literally to deactivate the SP plugin (NOT Uninstall! - just deactivate) and them immediately re-activate it again.
