I got a complaint yesterday about this issue. It apparently happened after I upgraded to 5.05. You can post something and then look at the "last post" time on the main forum page and it says "7 hours ago."
Is their a solution to this I'm missing? I'm not understanding the previous posts too well.
The only thing I gleaned from this is that I have been using UTC settings with no problem and you advise not to. I've changed it now and will wait " a day or so" to see if it corrects itself.
I point out again that the time zone problem I encountered only occurred AFTER the latest update. Prior to that it was fine and the problem has been reported now by multiple users so it would appear that the update changed something regarding this.
there were corrections made... fixed some lingering issues in the time calculation...
but it usually comes down to your server timezone, your wp timezone setting and then the timezone each use has selected for themselves... if users have not selected at timzone, they easily could be getting a timezone based time which may not be theirs...
thus far, no other reports of 5.0.5 getting off - just confirmation that the few issues previously were corrected... so will need to keep digging on data with yours to see what might be the cause....

Try to change php.ini date.timezone to "Europe/London" for example and put it on your WP time aswell.

Just for information purposes the update made in 5.0.5 was triggered by the discovery that there are some plugins out there being used by some of our users, that reset the WordPress timezone setting to do whatever it is they do but do NOT reset it back when they have finished with it. This was causing issues as the calculations were being made against the wrong criteria. The change to 5.0.5 was simply to ensure that the WP server timezone setting was being reset and used.

I'm happy to report that all is well this morning.
I failed to say earlier that when I checked profile / options / edit display options before reporting this issue it had been set to some foreign country (I suppose 7 hours off from my time). I changed it, but as you say... it takes "a day or so" before it changes.
Is it possible the update changed this setting or maybe as Swordfish says, I have a plugin that changed it. It was only the setting in SimplePress that had been changed though, the timezone setting in wordpress had not been changed.
I can assure you we do not touch the data during an upgrade unless we are adding new or removing old items. Certainly nothing was changed in the profile data and we would not go near WP data although I believe WP may have touched the server timezone in the 3.3 update.
