I hate to ask this question, as I'm sure it has an obvious answer, but I've looked everywhere for this option and can't seem to find it. I remember seeing an option to allow my guests to change the theme colour of the forum when they visit. I want to turn this option off, where do I find this?

Sounds like you have our 'User Selection' plugin active... just deactivate it.
