If i add a topic to a sub forum, it will add the topic to the sub-forum but not update the parent-forum last post.

Ok I think I may have tracked this down and it mighjt be a small bug.
Would you be willing and able to make a small code change to a file to test my theory?

You need the file /forum/content/sp_group_view_functions.php
The function needed is sp_ForumIndexLastPost() - about three-quarters plus down the file...
near the top is the line:
if ($spThisForum->post_count == 0) return;
can you comment that out and give it a try?

That fixed it. For forums that have no topics in there at all show 'Last Post' only (no username and date etc) when before it was blank. Not sure if that should be the way it is intended or if you actually want it to be completely blank. However commenting that line did make it so the sub forums show last post in the parent forums
