Okay, so then would be it accurate to say that my members can use other members' login names to tag people (or find people they want to tag, via the drop down) with Mentions plugin?
What I'm trying to suss out here is simply what to tell my members to do, if/when I switch to Mentions plugin, since using actual names sounds like it won't.
Does that make sense?

yes, I think what you say makes sense... except for one thing... since its not likely they will recognize the user login names, when the dropdown is displayed, it will actually display the user's display name... they should recognize that...
I know this is a bit convoluted, but coming up with a regex for the display name as typed by the user is very expensive, slow and complicated... if the users display name is drastically different than their display name is the only time it will get confusing...
but what you say is the best path forward... start typing the user login but match the user display name in the dropdown...

Okay, more questions:
The main reason I'm considering switching from WL Tags to Mentions plugin is so that my members who are posting by email (which WORKS now!!!) will be able to tag/@ mention people.
Since they will not be encountering the drop-down menu, how do they tag someone? What name do they type in after the @ symbol to make this work via post-by-email??

to mention folks in PBE, you will need to do a @user-nicename... must say, havent actually tested it, but cant think why it wouldnt work... when you use the dropdown, you will see that is what gets saved in the post... so the plugin will scan PBE for same...

Read this thread...I can confirm that I had trouble setting up Gmail PBE as well. It had less to do with Gmail as it did my host. I use Bluehost and it is a known conflict trying to route email through Gmail on that host.
My solution was to just setup the unique email addresses on Bluehost (as you did on GoDaddy), but still have Wordpress make it look like emails are sent from Gmail (as an alias, I guess. Plus all other WP emails are sent through Gmail address). However, when a user replies to a notification, the system defaults to the unique email address for the Reply Email / Post.
I am also using Mandrill App to send emails rather than the default Email PHP code in WP.
