I have made a copy of the "default" theme folder - the folder is called "ccc" - to edit the default them to my own needs.
Problem is, that the "ccc" theme does not show up at "Available themes", it still shows only the default theme there. What did I do wrong?

You need to also rename the main theme css/php file - so if you are cloning the 'default' theme you will need to rename the 'default.php' to 'ccc.php. Then open the 'spTheme.txt' and edit the header - you will see what needs to be changed.

I installed simple press through my desk top, not http://ftp. My header (theme?) is not appearing at the top. How to fix without using ftp program? Thanks,

dont understand your link...
your theme or header is not appearing? does the page template you are using for the forum page have a header on it?

I'm having the same trouble (more frustrating is that I have done this successfully before) screen shots below of all my settings. Does anyone see a problem that would cause my own theme not to display?

upcycled.txt should remain named spTheme.txt
