The email sent to the actual new user is changeable but not that sent to you - the site administrator. Or - you can just turn it off and continue to use the original WordPress version.

the settings Andy refer to are on forum - options - email settings...

additionally, if you use our HTML emails plugin for simple press, you can customize both of those emails...
