Hello,
I've just upgraded my WO to last version (3.8.1)
an then I made all automatic updates to Simple:Press and the forum plugin i was using.
Now the "subscribe entire forums" feature is missing:
- the option of allowing entire forums subscriptions is enabled
- I've toolbox-> cleaned everythign (including profile tabs reset)
- then I tried to save again profile tabs setting
But the "subscribe entire forus" tab is missing both in frontend profile than in profile tabs management in backend

Yes swordfish, I updated even the SP Subscriptions plugin, and other subscription options in user profile are correctly working:
- Subscription Options OK
- Topic Subscriptions OK
- Subscribe Entire Forums - NOT PRESENT
The fact is I upgraded everything just because the subscribe entire forums fuction was not working. Before upgrade clicking on "save" was giving a green notification with "null" as text and preferences were not saved. I've just noticed another weirdness: the "profile" button doesn't link to "profile" page, it just have a link to the page you are on

You really are getting some serious interference from other CSS in many places aren't you. Some weird displays.
OK first thing first. The profile form was not showing because for some reason all of the profile settings had been nulled. I have set them to their defaults but if this is not what you want them to be you will need to change them. The way the radio buttons show up in a line like that really does show up the interference!
So - beating in mind I can't speak Italian (and my wife was not at home when I was looking at this) but is the permission to subscribe to forums actually turned on in the permission sets where it is required?

I see I have some css interference, it has happened after Wordpress and Simple:Press updates. But this is not an issue, I can fix it quickly if all the rest will work.
The profile form was actuallly showing if I get to the profile page via URL, anyway now it's working even the "profile" button link.
But subscriptions are still not there:
- not in backend profile tabs options: http://prntscr.com/32glco

- the "alllow users to subscribe entire forums" option is turned on: http://prntscr.com/32gkvw

what else I can look for?
Actually the 'CSS' issue is our fault and I have put a fix in place for the next update. I just had not seen it before and I am sorry about that.
The question was actually 'is the permission to subscribe to forums actually turned on in the permission sets where it is required'? That is forum admin > permissions > manage permission sets > select one of the sets that you are using and check if the permission to 'Can subscribe to forums (if enabled) and topics' is (a) shown in the list and (b) turned on? Check all permission sets that you use.

I'm using my administrator account, that has moderator access permission set, where quite everything is enabled.

but as I'm not sure that the option you're tellling me is present (because of translation) can yu tellme how may I remove italian translation files so we can look at it in english? (I can't remember where they are and I cannot find them)
By default, language MO files would be located in /wp-content/sp-resources/forum-language/sp-plugins/ and the name of the subscription file is sp-subs-it...
All you need to do there is rename it briefly to make your check and then rename it back again afterwards.
The permission should be located in the first grouping 'General'.
